Our oils

Luisa Righetti’s Col di Sasso Farming Company, set in the hills of Scarlino, produces extra virgin olive oil varieties from various varieties:

- extra virgin olive oil from the “frantoio” - typical of the Tuscan area, it produces a fruity oil, slightly spicy, very high quality with a slightly bitter aftertaste

- extra virgin olive oil from “coratina” – a variety from the Apulia area planted on the estate decades ago, produces an oil of optimum quality with specific characteristics that from the first yields a fruity and spicy taste, with a bitter aftertaste

- extra virgin olive oil from the “scarlinese olive”– a local variety from the Scarlino area, dating back to the Middle Ages, now very rare, because not very profitable.

The Scarlinese olive oil, officially recognised by Presidential Decree from 2001 as a heritage agricultural and food product of the Tuscan Region, is of truly excellent quality, with a greenish-yellow color and intense aroma.

Col di Sasso produces extra virgin olive oil from Tuscany olives extracted from the olives pressed of the “frantoio” and “coratina” varieties. This is an oil of highest quality, balanced in taste, and moderately spicy.
